Hello Everyone, The human mind is amazing how it can shift from a traumatic experience of running for your life to laughing hysterically, because you made it out alive with only a few battle wounds and no hospital bills. Our adventure began with my desire to be an excellent host and provide a memorable experience for my US friends who wanted to go hiking. At the trail head we were greeted by a friendly, 10 year old, indigenous boy carrying a machete as big as him. In his native tongue, he warned us not to go any further due to bees. How sweet of him for being so lovingly over protective of “the tourists”. I thought! Taking the proper protective measures, I asked if anyone was allergic to bees. With a unanimous no, we slipped him a few dollars to show our gratitude, and continued on the path to enjoy the beautiful scenery. My justification was the awareness of a Panamanian culture that seems to be notorious for being fearful of things without premise. Kind of like the urban legends that have been passed down from generation to generation. I guess that is everywhere though, not just here!! Half way into the hike, two men suited in beekeeper’s protective clothing, driving a truck with a smoke machine, passed us. The men warned us not to go up there. “The bees are angry!” they said. Once again, my prideful ignorance of knowing more than the beekeepers kicked in, and we merrily continued on our adventure. Not too long after we passed the truck, we began to notice a bee here and there. Then a few more bees, and then even more, the numbers of bees increased rapidly. My friend’s back was covered in bees. We were sweeping bees off of our arms, backs, clothing, and even in between clothing. They were swarming all around us as if we were life sized, opened, soda cans spilt on a hot picnic day. Ouch! One got my eye. As fast as I swiped it off another one got me near the same spot. They were angry bees, swarming all around us, wondering what we did with their honey comb!!! With a relentless vengeance, they were determined to get it back. As the intensity swelled to the magnitude of my eye, we took off, at breakneck speed, to flee this terror. We didn’t stop till we felt like we were far enough away from danger. Trying to catch our breath we looked around to see if we were in a safe zone. A sinking feeling ran through our entire being when we notice our friend had run the opposite direction. The distance between us seemed impossible to close due to the Africanized nightmare between us. She looked back and forth for another route, concluding the only way was straight through them. With a huge sprint of energy and a prayer in her breath, she charged down the path through the swarm of bees. When she reached our side we began swiping off the bees, and pulling bees out of her hair, and stingers out of her scalp. Shortly, we were eagerly motivated to resume our hike towards our car! The men in the truck met us on the road and graciously gave us a ride the rest of the way. The driver began sharing the fact that they use Africanized bees, instead of the European ones, because they are heavier honey producers. I had no idea if this was true or not, so I politely challenged him to hear his points, and consider his words; after all, he was correct about the angry bees. When we arrived at our car, we said thank you, and with our goodbyes he gave us a large piece of honey comb. Wow! In our eyes it became a sweet golden victory medal. Under the beautiful clear blue sky we sat down to enjoy the honey in its purist form straight from the honeycomb. While enjoying the sweetest taste I have had in a long time, I began pondering. My eye looks like Mike Tyson’s punching bag. Most people end up dead or deathly ill in a hospital after that extreme encounter. What are my friends thinking about that moment? Well, I did take precautions and ask them if they had allergies. Concern and worry began to spoil the sweet moment we were all enjoying. I looked at the chunk of honey comb in my fingers and thought to myself, Nahhhh! I choose to enjoy this moment of victory. By the grace and protection of God all of us are ok and survived unscathed, just a few bites here and there that will heal, and an unforgettable memory we can take with us for a life time. This adventure has intrigued me enough to research about honey and more specifically the Africanized flying nightmares that produce it. Honey, in its purest form, is some of the sweetest stuff I have tasted in a long time, and after a little research, I have discovered that it has some awesome properties as well. I am so fascinated by this; I believe my next article will include the health properties of honey and how miraculous it is.   5. To our friends and animal lovers, Fundacion Amigos de Animales has had a great year that saw the opening of our very own facility in which to hold our clinics and community events. We have spayed or neutered over 9500 animals in the Boquete area; this year alone, we sterilized 1907 animals. We have established feeding stations throughout the community to aid homeless animals and we provide life-saving food for helpless kittens and puppies brought in to our clinics. Our education program has begun working with the schools to teach the children how to care for their pets. Our goals for 2016 are to continue to provide low cost spay and neuter services for the dogs and cats of our community. We plan to expand our education program so that it can reach even more school age children to teach them how to be better caretakers for their family pets.  We need your financial help this year more than ever as we have lost major funding from Bid4Boquete which will not be taking place in 2016. When you sit down to make out your holiday gift list, please remember Fundacion Amigos de Animales Boquete. You  can write a check made out to FADAB in any amount, drop a cash donation to our volunteers at the Tuesday morning meeting, or donate through PayPal on our website: www.aadab.org.   11. A BIG thank you to everyone that came to the Christmas party at La Posada yesterday. The band of Dos Amigos was great. I understand they are still available for New Years Eve if you're interested. We reached our goal of over 100 gifts for underprivileged kids plus cash donations to purchase more. Captain Aruaz and his beautiful wife were there to the music, food and take the gifts to a safe place until Santa can deliver them. What a great a great community we live in. Pan fried in Olive oil this fish is crusted with ground almonds and parmesan cheese and is perfectly seasoned.... So yummy. Served with olive oil roasted vegetables and fresh herbs (Cauliflower, carrots, Broccoli). Feeds 2 adults Cajun Chicken and Sausage Gumbo $8.00: Enjoy this delicious staple from the bayou. We start off by making a flavorful medium dark and rich roux, then adding all of the veggies and pork sausage. After a slow cook we toss in some white and dark chicken meat and voila. There you have it. Tender and juicy chicken with delicious sausage that is Cajun comfort food to the core. Simply heat and serve. Serves 2 and is best over rice (Rice not included). This is medium Spicy Sweet Sticky Spicy Chicken $9.00: A real flavor blast. We use the trifecta of ingredients for the sauce to coat these breaded chicken bites. Sweet(Brown Sugar), Sticky (Honey), and Spicy (Srirachi hot sauce) says it all with this dish. A touch of garlic and a hint of ginger really elevates this dish.. A wonderful assortment of stir fried red bell peppers and grilled pineapple next to a bed of Jasmine Coconut Rice and Black Rice (Forbidden Rice).Now with more rice, more chicken, and more sauce!! This is a Spicy Dish. Feeds 1- 2 Broccoli and Chicken Divan $8.00: A crowd pleaser. This wonderful casserole is full of flavor. Chicken cubes and broccoli make up this dish as it is layered with cheddar cheese a butter and parmesan cheese bread crumb topping, and a delicious gravy that is made up of white wine, sour cream, and mushroom soup (has condensed soup in it which contains a form of msg). Feeds 1 - 2 Chandler's Honey Chicken $9.00 : This Chinese favorite makes its way into our menu by way of Chandler. A delicious twist to this Chinese takeout classic. Honey Chicken is a mild Chicken dish that has been gently tossed in a sweet and tangy Honey Sauce. Coated with a corn starch slurry this batter makes this dish unique. Almost like a tempura batter. Paired with a delicious side of Chinese Fried Rice this dish is for 2 adults. (Contains an ingredient that has a trace amount of MSG in it. Also has a touch of sesame seed oil in the fried rice.) NOW WITH MORE CHICKEN AND MORE SAUCE!!!! Chicken Leek and Mushroom Casserole $9.00: Tender Chicken Thighs cooked in a white wine reduction sauce with crispy bacon, button mushrooms, and fresh leeks (Puerro). This comfort food simply takes the cake in flavor. Served with a generous portion of creamed mashed potatoes. Now with more mushrooms, bacon, leeks and chicken!! Feeds 2. (GF) Mexican Tortilla Soup $8.00: This Boquete favorite is a personal favorite as well! Spicy and rich this hearty tomato based Mexican soup has it all. Comes with fried crispy tortilla chips (for garnish) has loads of tender and succulent chicken meat, and tons of fresh veggies like tomatoes, onions, zucchini, black beans, corn, roasted red pepper, and more. Seasoned with chipotle peppers, oregano, cumin and more this well balanced soup is as authentic as it comes. Just like Abuelita used to make. All you have to do is add a dollop of sour cream with a pinch of cheddar cheese. A great soup that will not disappoint (V) Deluxe Creamy Mac & Cheese $7.00: Who doesn’t just love Mac and Cheese? This version is ultra creamy and super cheesy! We utilize many different types of cheeses to make this amazing comfort food. Cheddar, Mozzarella, Cremoso, and Parmesan just to name a few all come together for a rich and creamy experience that’s topped with a butter breadcrumb topping. Great as a side or as a stand-alone meal. Bake and enjoy. Feeds 2 (GF)Chinese Beef and Broccoli $8.00 (Now with less sodium): Enjoy this classic take out dish. Wonderful and tender beef tossed with blanched crisp broccoli and mixed with a tangy and spicy Chinese sauce. We changed our soy sauce brand and it made a wonderful difference in the saltiness of this dish. I also tweaked this recipe to add a delicate sweetness to balance out the spicy. It came out ridiculous. Great over noodles or over white jasmine rice. This dish will feed 2 adults. (Does not come with rice) This is a medium Spicy Dish Tex-Mex Pasta Casserole (New and Improved) $8.00: Enjoy a south of the border creation that blends flavors from the Lone Star State with spices from Latin America. Creamy black beans and corn popping with flavor as they are mixed with cheddar and all tossed in a ground beef and Mexican salsa mixture. Oregano, cumin and cilantro is then added to the mix as it is tossed with rotini pasta. Topped with cheddar cheese this is a real treat for 2 adults. Add some sour cream to top of this experience. Pasta Pizza Bake $8.00: Be adventurous. This deconstructed pizza has all the wonderful flavors that you've come to love from pizza. We use fresh basil and oregano in our pizza sauce and toss it with our very own Italian sausage and hamburger meat. We then create a layer of al dente cooked rotini pasta tossed in an Italian carbonera sauce. Next we layer the meat sauce over it and add nice layer of mozzarella cheese and finally topped with some pepperoni. A classic in its own right. So delicious and perfect for 2 Adults. Salad Cobb Salad $7: In the mood for a crisp and refreshing salad to start the week? This salad just takes the cake. Chicken, tomatoes, bacon, mozzarella, eggs, onions. A mix of 4 varieties of hydroponically grown lettuce and a house crafted original cob salad dressing… This is a fresh salad and will be good for a couple days in the refrigerator. This week the COBB has Mozzarella not Bleu Cheese Sides Cooked Jasmine Rice $1.00: Each bag has pre-cooked rice ready for you to warm up and serve with your dinner. Easy and no hassle Desserts Cranberry Scones $1: Baked just before the market these beautiful scones are perfect for a quick breakfast or snack on the go. Loaded with fruit you will find these scones to be moist and flakey. Located 8 kms from downtown Boquete on the left hand side of the road to David, 2 doors down from Boquete Car Rental(Cowboy Daves'). Coming from Boquete on the new highway (not so new anymore...its got pot holes already), make a U turn at the Equestrian Center and drive half a km back towards Boquete and you will see a Don Quixote statue and the LOS ANGELES sign.
