We hope that you are staying safe and healthy these days.  As the rainy season quickly approaches, we are finding ourselves busy with lots of various projects.  Today we get to reveal a few of those projects.  Before I begin let me start off by saying that this week our freezer meal menu has more options than ever.  We’ve added more chicken pot pies (by popular demand), Chinese chicken chow mein, Chinese cashew chicken, Chinese beef & Broccoli, Mexican Spicy Mole, Mexican Chile Relleno (deconstructed), Black Bean Soup, Porchetta roast, Texas Pulled Pork, Chicken Divan, Deluxe and creamy mac and cheese, and all sorts of other goodies.

Speaking of mac and cheese, we’re not kidding when we called it Deluxe and creamy.  Our mac and cheese dinner is the creamiest and cheesiest mac ever.  It’s a cheese lovers dream come true as we’ve combined 5 amazing cheeses (mozzarella, extra sharp cheddar, parmesan, provolone, and cremosa) into 1 cheese sauce topped with a crunchy parmesan, butter, panko topping to create a mac masterpiece 😂.  No, seriously if you hate cheese you might want to stay away from this one 😀.

On the horizon we’ve got old fashion meatloaf, Chicken Pad Thai,  Creamy Chicken Vegetable casserole, Moussaka, Chicken Parmesan, and loads more!!

Some of our new items include an entire line of new double butter luxury soaps.  These soaps leave your skin feeling soft and young with a creamy later and high moisturizing properties.  This week we have Chamomile Soap, Peppermint essential oil, peach, apple essence, a beautiful rose, coconut, and fresh linen.

We are also excited to announce that we have been working on a special fermented hot sauce that will literally knock your socks off.  We’ve carefully selected a series of high-end exotic gourmet peppers to grow and over the last year we’ve been fermenting these peppers patiently in a controlled environment.  Fermenting peppers adds a probiotic element and a complexity in flavor to the sauce that it otherwise wouldn’t have.  The peppers we use are a little smoky, fruity, full bodied, and packing some serious heat.  If you like spicy this is right up your alley.  Be warned though, it’s a HOT sauce.  You might just want to start off with 1 drop and see how it goes…..

Finally, we’ve had lots of requests regarding cheese.  Most of the cheese we’ve been making takes 6 months or longer to make so those will be a while, but today we have a beautiful Italian soft goat cheese available in very limited quantities.  If the response is good, I’ll produce more.  This little-known cheese is called Nerina and it’s absolutely delicious.  Nerina is a bloomy rind mild goat cheese that ages for roughly 3 weeks in a controlled environment.  This goat cheese is coated in a layer of vegetable ash and beneficial molds are grown around it (think brie and camembert).  The end result is a creamy cheese that is bright, a little tangy, slightly earthy, with hints of citrus.  The bloomy rind that’s formed on the exterior has a completely different flavor as it brings a floral, nutty, and sweet young mushroom flavor which pairs perfectly with this cheese.  The rind is completely edible and we highly suggest that you eat it along with the cheese as the contrasting textures and flavors will delight your palate.  Mild, creamy, and elegant Nerina will entice even the most skeptical critics of goat cheese.  This week we’ve pre-sliced each portion to roughly quarter pound portions.  To see a picture of our cheese click on my website (below)  and scroll down to the “cheese section”  Click on the image..

Since we’ve been working with so much goat milk, we also have Goat Milk Kefir.  Our kefir is made with natural kefir grains and allowed to ferment slowly (followed by a cold ripening period) in a controlled environment.  This allows over 20 different strains of bacteria to develop and create a probiotic milk that’s great for drinking (to replenish your natural gut flora) or to add in recipes for a more digestible product.  This is a great buttermilk substitute if you want to use it to marinate chicken, make pancakes, waffles, sourdough bread, or biscuits.  Limited quantities are available.  Only made to order – fresh each week.

I’m really just touching on what’s to come so if you’d like to be a part of our weekly newsletter be sure to click here:  Click here to get on my mailing list!!
