For the first time in Boquete: Four hands and one menu, a collaboration between chef Patricia Miranda Allen of Cerro Brujo Gourmet In Volcano and chef Chris Young from Colibri Restaurant in Boquete!!

Wednesday, August 17th from 5:00 pm to 10:00 pm at Colibrí Restaurant in Boquete.

Menu:

Appetizers and Salads:


Trio of croquettes: Yucca with cod, Pixbae with cheese, Creole and ñame-Otoe with pork tasajo bits, accompanied by homemade onion jam $ 11.00

Deconstructed Tuna and Strawberry Salad with a strawberry and basil vinaigrette $11

Watercress, kale, lettuce, arugula, orange wedges, zucchini and carrot noodles salad with edible Flowers. Creamy goat milk yogurt, avocado, grated onion and culantro dressing $10.00 

Mains:

Pork Roast with fresh turmeric, garlic and ginger paste and fresh oregano and rosemary, seasoned with beer and honey baked over low heat for 7 hours with white or purple mashed ñampi $ 18.00

Caribbean octopus with coconut rice $ 18.00

Desserts:

Goat cheese ice cream pie with freeze dried ice cream $8.00

Hot candied green figs on vanilla ice cream $ 8.00

Trío de croquetas: Yuca con bacalao, Pixbae con queso criollo y ñame-otoe con bits de tasajo de cerdo acompañado de mermelada de cebolla casera $11.00

Ensalada deconstruída de atún y fresas con una vinagreta de albahaca y fresas $11.00

Ensalada de berro, col berza (kale), lechugas variadas, rúcula, cuñas de naranja, spaguetties de zucchini y zanahoria. Flores Comestibles. Aderezo cremoso de Yogurt de leche de cabra, aguacate, cebolla rallada y culantro criollo $10.00

Fuertes:

Pernil de Cerdo aliñado con cúrcuma fresca, pasta de ajo y jengibre, orégano y romero frescos, cerveza y miel de abeja horneado a fuego lento durante 7 horas acompañado con 
puré de Ñampi blanco o morado $18.00

Pulpo Caribeño con Arroz de Coco $18.00

Postres:

Pie de helado de queso de cabra con helado en polvo (liofilizado) $8.00
