REPRINTED FROM NEWSROOM PANAMA: Copa launches low-cost airline Posted on October 20, 2016 in Latin America & Caribbean, Panama A NEW LOW-COST AIRLINE was launched in Panama on Thursday October 20 by Copa Holdings which owns Copa Airlines. Wingo, will start operating December 1. And the company enabled its website for ticket purchase. The airline will operate five domestic routes in Colombia and 12 international flights, among which are Panama, Costa Rica, Venezuela and Ecuador. Unlike Copa Airlines, which has its base of operations at Tocumen International Airport, Wingo will use the airport, in the former Howard military base at in Panama Pacific. From Panama travelers can fly to the cities of Medellin, Bogota and Cali, and to San Jose, Costa Rica. Wingo will start with a fleet of 4 aircraft models Boeing -737 to 700, with a capacity for 142 people. Price war With this move, Copa Holdings will compete in the low-cost segment with Viva-Colombia and Air Panama, which maintain daily flights to San Jose, Bogota and Medellin, and passengers can look forward to a price war. Pedro Heilbron, CEO of Copa Holdings, said the launch of Wingo will allow the company to take advantage of opportunities offered by the low-cost segment.

Yes, it's last minute - because we were sold out, but we have had a couple of last minute cancellations due to illness and there are now 2 rooms still available for this happy party. LAST CHANCE NUTRE HOGAR BUS TRIP THURSDAY, OCTOBER 27 Nutre Hogar is an amazing facility in David that takes malnourished children close to death and keeps them until they are well enough to be returned to their families. This is a large, multi-faceted operation that is an integral part of our Chiriqui community. We will leave at 9 AM from the BCP parking lot and will get a private tour and snacks as well as meeting the staff and the children. We will each donate $10 to cover the bus and a small donation. Last week Jesse the cockatoo, the pet of the veterinary clinic Centro Veterinario Panamá located in Panama City owned by our vet and friend Dr. Julio Reyes was stolen, no equipment or money was taken, whoever broke into the clinic had the intention of stealing Jesse. We believe that Jesse will be offer for sale on Internet or outside Panamá City. A reward is offered with NO questions ask to anybody who knows Jesse's whereabouts or can provide any information about Jesse.   15. A kind gentleman picked up a dog laying on the side of the road yesterday and took him to the vet. He was obviously hit by a car. It is a male Shepard mix found on Volcancito Road. He said it is very calm and gentle and a very beautiful dog. We suspect it has an owner, as it is in very good shape otherwise.   16. Great Day Everyone, I've got a lot to cover so for this week let's get down to business. I have prepared a special seasonal dish in honor of OktoberFest. By the way speaking of Oktoberfest have you tried the limited edition Oktoberfest Beer by Balboa? Very tasty!!! I digress. This week and next week I will have a special German dish that will aim to please!! This week's selection is a German Beer and Potato Soup. sounds wild but trust me when I tell you the flavors work and if you like German food or have ever wanted to try it now is the time.. I wanted to make it Gluten Free but the beer has Gluten in it. So if you are super sensitive to Gluten the I'm sorry to say you might have to miss out on this one. Although the Parts Per Million of Gluten in this dish is extremely low as it has been diluted out with a roasted chicken stock. You decide. Next week we will be spotlighting a German Favorite that literally means "Pickled Roast Beef" or as they would say in Munich, "Sauerbraten"!!! Ok, Here is an update for some other food projects that we have brewing. Last Sunday we started a fresh batch of Gourmet Sauerkraut. 60 pounds of cabbage got cleaned up and tossed into the crock so we will be having a great product in the near future. As many of you already know we ferment for no less than 10 weeks to give it that unique flavor and essential bacteria growth... Also the Salt Pork is halfway done and looks like it will be ready for next week's market. Last week the corned beef sold like pancakes so we started the process of corning 30 pounds of brisket. This also will be ready next week.. The responses have been tremendous and we really appreciate the feedback... This is going to sound totally crazy but we have been getting requests for "Mantequa". Mantequa is the Spanish word for Lard. This is a product that simply doesn't exist here in Panama so one need to go through the process of making it. We as you probably already guessed, we made some. The process is actually quite delicate and long but done right the end product is a snow white and fluffy fat that can be creamed and used in many dishes... If you are looking to have a pint let me know. Chandler will be making Cajun Potato Salad for the market and I now have Hatch Chili's, Chile de Arbol, Pequin, and Chile Ancho so get ready for a dish that is loaded with some of the most flavorful peppers on the planet.. A soul satisfying soup that spells comfort a completely different way..."Komfort". The flavor combination of this soup starts with bacon, potatoes, Dijon Mustard and a roasted chicken stock. The potatoes and stock are puréed to give it a nice consistency while the leeks, celery, onions, and diced potatoes are pan fried in the bacon grease. I could stop right there and be in heaven but we then added 8 pints of Bitburger and allowed the beer to reduce. Finished the dish by incorporating the puree and more roasted chicken stock to produce a soup worthy of an Oktoberfest celebration... Feeds 2 adults (V) (GF) Saag Paneer $8.00: Due to an overwhelming response of this dish's popularity we decided to bring it back bigger and better. This dish is packed full of exotic flavors and has a nice spicy bite to it. Nothing crazy though.. Many think that this dish is simply cheese and spinach thrown together and I want you to know that nothing could be farther from the truth. This dish is a cooking process of strategically breaking down the veggies to develop a unique flavor profile that when combined with certain seasonings gives this dish a wonderful and unforgettable culinary experience. So simple and yet so complicated. Generally a large batch of saag paneer will take in the upwards of 8 hours to make Blanched Bloomsdale Spinach and Pan fried Cheese mixed with Turmeric, Cumin, G. Masala, Coriander, and tossed with caramelized onions, garlic, jalapenos, and ginger. To top it all off a touch of cream. I am personally not a huge fan of the texture when it's completely pureed so this saag paneer is roughly chopped and makes for a delicious vegetarian meal that goes great with Pita Bread or Naan bread. What's great about this dish is that it just gets better after it has been frozen. When you let it thaw all the flavors will have married and fully developed. Rich, creamy, spicy, and authentically delicious. Feeds 1 -2 Italian Chicken Parmigiana $9.00: Ready for a full bodied Italian dish? This Chicken dish is right on track. Lightly breaded chicken breasts that are pan fried then baked are served over a bed of Linguini Pasta that has been tossed and coated in our Carbonera sauce of Cream and eggs. Finally the Chicken is covered in a special Parmigiana tomato sauce and coated with mozzarella cheese. Back by popular demand. Moist and tender. Each dish feeds 2 Adults. (Vegetarian, GF) Cajun Potato Salad $6.00: Last week someone asked me to bring back potato salad especially since I planned on making Gumbo. The two go hand in hand and is generally found on lunch or dinner tables all across south Louisiana. This delicious salad is a combination of mayo, mustard, pickles, red onions, celery, potatoes and fresh herbs and seasonings. Enjoy cold by itself or place a scoop of it right in the middle of your bowl of hot Gumbo for a Crazy Cajun experience. 1 Pound. Feeds 1- 2 (GF) Texas Pulled Pork $8.00: Have you ever been in one of those moods? This week we wanted some Texas Pulled Pork so I fired up the Big Green Egg and started smoking Boston Butt that's been injected with an apple juice marinade on Wednesday. We finally finished smoking everything we had on Friday. What a week, !!! You got to love authentic, tender, properly cooked pulled pork. Nice crunchy bark with a beautiful smoke ring throughout. Cooked the only way this Texas/Cajun knows how, on a pit!!! All that's missing is some Cole Slaw, a pickle, and an onion. Each portion is enough for 2 healthy sandwiches. Slap it between a bun and you got lunch in under 5 minutes!! SOLD OUT Chicken Leek and Mushroom Casserole $9.00: Tender Chicken Thighs cooked in a white wine reduction sauce with crispy bacon, button mushrooms, and fresh leeks (Puerro). This comfort food simply takes the cake in flavor. Served with a generous portion of creamed mashed potatoes. Now with more mushrooms, bacon, leeks and chicken!! Feeds 2. Cream of 4 Mushroom Soup $10.00 (Only 3 Available): We have a creamy and rich Mushroom soup that has fresh crimini, button, portobellini, and Portobello mushrooms in it. Made with our delicious chicken stock and a touch of seasoning. This dish can be served by itself, over Jasmine Rice or added to your favorite casserole for a delicious and exotic upgrade. Feeds 2 Adults. (GF) Mexican Pork Tamales $5.00 (pack of 4) (Only 6 Available): We are very excited this week as we are bringing back a limited quantity of Tamales. We were not sure as to how many we would make as most everyone knows how labor intensive Tamales are to produce. These are authentic Mexican Tamales wrapped in a corn husk. Moist masa and juicy shredded pork seasoned with a chile ancho sauce, all you have to do is add your favorite hot sauce or salsa. It's important to know that Mexican Tamales are not like Panama Tamales. They are smaller and made completely different. We wanted everyone to get some so rather than packaging up packs of 8 (for 2) we decided to package them up in packs of 4. This way more people can try them out. The cool thing about these tamales is that they are packaged in our new vacuum packaging to retain freshness and flavor. If you choose, these bags allow you the opportunity to reheat your food by simply dropping the bag in some boiling water for 10 minutes. Alternatively you could remove from bag and steam for 20 minutes or nuke them in the microwave with a damp cloth over them... I hope you enjoy this new product. New Orleans Red Beans and Andouille Sausage $8.00 (Only 1 Available): What a meal!! We are so excited about this dish as Cecelia has outdone herself. Talk about awesome flavor. This traditional New Orleans dish comes to Boquete in all its glory. Andouille sausage, pork tasso, creamy kidney beans, and a trifecta of veggies and fresh herbs to bring it all together. Enjoy this dish by itself or with a side of rice. (Rice not included) Buttermilk Fried Chicken and Country Gravy $9.00: A taste of the old southern comfort foods is on the menu this week. Have you ever had a SPUD that's been tossed with sweet corn and fried chicken bits, then smothered in a country pepper gravy? Well this week Chandler is whipping up his version of that dish by layering a bed of creamy and velvety mashed potatoes and sweet corn, buttermilk fried chicken, old fashion country pepper gravy. This dish has everything that soul/comfort food represents. Alaskan Salmon Patties $10:00 (Only 3 Available): I have had this requested recently as many want a seafood alternative. I personally love Salmon Croquettes. This one is top shelf all the way. Red Alaskan Salmon, Red Onion, Celery, sautéed bell peppers, fresh herbs and spices are all in these beautiful patties. Breaded and pan fried this Salmon Patty is served with a topping and side of peas and mushroom béchamel over long grain parboiled Rice. Feeds 2 Adults. Cajun Chicken and Andouille Sausage Gumbo $8.00: Enjoy this delicious staple from the bayou. We start off by making a flavorful medium dark and rich roux, then adding all of the veggies and pork sausage. After a slow cook we toss in some white chicken meat and voila. There you have it. Tender and juicy chicken with delicious sausage that is Cajun comfort food to the core. Oh by the way we added a wonderful treat to make it especially authentic. See if you can notice!! Simply heat and serve. Goes great with a side of Cajun Potato Salad. Serves 2 and is best over rice with crackers (Rice and crackers not included). This is medium Spicy Traditional Italian Baked Ziti $10.00 : This casserole dish is huge and fills our entire dish. A very tasty and traditional pasta dish with remarkable complex flavors. This baked Ziti has ground beef, sweet Italian sausage, Hot Italian Sausage, mozzarella, fresh herbs, parmesan, ricotta cheese and a delicious pasta sauce all tossed together with Ziti (Penne) Pasta. Fresh herbs like oregano and basil add to the subtle flavors in this entree. A great Italian casserole type dish. Feeds 2-4 adults and is very filling!! This dish is mildly spicy. (GF)Thai Coconut Chicken Curry (mild) $8.00 (Only 3 Available): A different taste of Thailand is on the menu this week. We have a wonderful blend of delicious ingredients to make an outstanding Yellow that is stir fried in coconut oil. This dish is considered authentic street Thai.. Chicken Breasts mixed with tomatoes and Potatoes are all brought together with the addition of fresh kaffir lime leaves and toasted coconut. A real flavor blast. This is a mild Thai Dish and will feed 2 adults. Best over Jasmine Rice. (Rice not included) (GF) Shepherd's Pie $8.00: Guess What? The Shepherd's Pie is Back!! This meat pie is full of flavor. Utilizing a tomato puree, a few seasonings, rosemary and thyme we create a wonderful beef gravy with freshly ground beef and toss it with carrots, corn, and peas for the complete package. Topped with creamed potatoes and baked this comfort food is time tested. A Boquete favorite for 4 years running!! Feeds 2 Adults (V) Deluxe Creamy Mac & Cheese $7.00: Who doesn’t just love Mac and Cheese? This version is ultra creamy and super cheesy! We utilize many different types of cheeses to make this amazing comfort food. Cheddar, Mozzarella, Cremoso, and Parmesan just to name a few all come together for a rich and creamy experience that’s topped with a butter breadcrumb Parmesan topping. Great as a side or as a stand-alone meal. Bake and enjoy. Feeds 2 Sweet Sticky Spicy Chicken $9.00: Who's ready for a taste of the exotic?? If you haven't had this dish yet believe me it's a real flavor blast. We use the trifecta of ingredients for the sauce to coat these breaded chicken breast bites. Sweet(Brown Sugar), Sticky (Honey), and Spicy (Srirachi hot sauce) says it all with this dish. A touch of garlic and a hint of ginger really elevates this dish.. Stir fried red bell peppers alongside a bed of Jasmine Coconut Rice and Black Rice (Forbidden Rice).Now with more rice, more chicken, and more sauce!! This is a Spicy Dish. Feeds 1- 2 Cajun Chicken and Andouille Sausage Jambalaya: $8.00 : I have kept this dish authentic Cajun so it's got a kick, but if you want a little extra heat feel free to spice it up!! Tender and juicy thigh meat, our very own house crafted Andouille Sausage, Tasso, lots of celery, onions, and bell peppers make the essence of this dish come together. If you want a real taste of Louisiana try this on for size.. (THIS is a medium Spicy Dish) \ (GF) Boquete Chili $8.00: I have made another batch due to the overwhelming requests. We really appreciate the feedback by the way!!. Using ground pork, bacon, ground beef, beer, beans and loads of great Chipotle spices we have created a chili masterpiece. Medium Spicy and goes great over rice or by itself this chili will bring comfort to those “chili” rainy nights in Boquete. Feeds 2 adults and has over 2 pounds of chili. Similar to how people make yogurt. You will love it. Limited quantities are available. (GF) BBQ Sauce $3.00: This house crafted (Boquete) BBQ sauce is simply out of this world. If you have enjoyed our Pulled Pork then you would have tasted it. Tangy, Sweet, Smokey, Bold, and just downright delicious. This is the first time we are featuring it on the menu and I am packaging it up in 16 ounce containers. There are no preservatives, artificial ingredients, no corn syrup, no number 5's, 6's or 7's. This is all natural and great on fried Yucca, ribs, burgers, hot dogs, as a dip for chicken wings, nuggets, or French fries. You can freeze this sauce and take it out on a rainy day... (GF) Creamy Mashed Potatoes $3.00: For the first time we are starting to offer a side of some of our more popular sides. This side item is the same as the one that goes with the Pork Chops and Shepherd's pie. We use a few egg yolks, cream, butter, and some seasonings to get that whipped creamy texture. Perfect by itself or with an entree like Chicken fried steak. We are packaging this in the Vacuum Bags Ranch Dressing $4.00/Pint: This fresh and delicious dressing is simply put awesome. Fresh and delicious ingredients come together to make a classic dipping sauce or salad dressing. No artificial ingredients at all. We will introduce Hank Landis and Bonnie Williams, the two new U.S. wardens, Tricia Daugherty, the British Consular Agent, and from the Canadian Embassy in Panama: Consul and First Secretary Mika Kosaki Oldham, Ambassador Anna-Karine Asselin, and Consular Officer, Ms. Debora De Herrera. These folks will speak about what their respective embassies can and cannot do for their citizens, how and when to contact them, their citizen registries maintained by the embassies, and other pertinent topics raised by the audience. Tuesday, Feb. 14 – Robert Bezeu, founder and developer of the “Plastic Bottle Village” development on Isla Colon in Bocas del Toro, will speak about his labor of love on Valentines Day. This eco-residential community will eventually consist of 120 homes built out of recycled plastic bottles. Marlin (Ben) and Joan Schuetz retired in 1997 and subsequently cruised the Caribbean for nearly 10 years in their trawler. In 2006 they found and settled in Boquete. With a degree in physics, Ben’s career included engineering, physics and management, but he always maintained a lingering interest in astronomy. In 2008 he constructed the Boquete Optical SETI Observatory which has since been in a constant state of development. The observatory’s objective is to search for pulsed laser signals originating from worlds that may be deliberately targeting earth. Come and learn more about Ben’s search for ET.
